British people are on average nearly three stone (24kg) heavier than 50 years ago, but who or what is to blame? Jacques Peretti (pictured above) investigates.

Contrary to popular belief, we as a race have not become greedier or less active in recent years. But one thing that has changed is the food we eat, and, more specifically, the sheer amount of sugar we ingest.


"Genetically, human beings haven't changed, but our environment, our access to cheap food has," says Professor Jimmy Bell, obesity specialist at Imperial College, London.


"We're being bombarded every day by the food industry to consume more and more food.
"It's a war between our bodies and the demands our body makes, and the accessibility that modern society gives us with food. And as a scientist I feel really depressed, because we are losing the war against obesity."


One of the biggest changes in our modern diet stems back to the 1970s when US agriculture embarked on the mass-production of corn and of high-fructose corn syrup, commonly used as a sweetener in processed foods.


This led to a massive surge in the quantities of cheaper food being supplied to American supermarkets, everything from cheap cereal to cheap biscuits. As a result, burgers got bigger and fries (fried in corn oil) got fattier.

According to nutritionist Marion Nestle, this paved the way for obesity.
"Obesity is caused when people consume too many calories without the exercise to balance it out” Susan Neely American Beverage Association 
"The number of calories produced in America, and available to American consumers, went from 3,200 in the 1970s and early 80s to 3,900 per person, almost twice as much as anybody needed. And that enormous increase, I think it's the cause of a great deal of difficulty," she says. 

High Fructose Corn Syrup (HFCS), a highly sweet by-product of waste corn, was also incredibly cheap. It began being used in every conceivable food - pizzas, coleslaw, meat. It provided a "just baked" sheen on bread and cakes.


By the mid 1980s, corn syrup had replaced sugar in fizzy soft drinks. The move made financial sense from the soft drink companies' point of view, as corn syrup was a third cheaper than sugar.


But it was also sweeter and, argue some scientists, more addictive. In the next two decades, the average American's consumption of fizzy drinks almost doubled - from 350 cans a year to 600.

Fast Company -- Chemicals Cause Stem Cells to Become Fat Cells!

The effect of chemicals on our endocrine systems has been well researched and documented. The article below by Fast Company asserts that chemicals also contribute to the obesity problem by causing our stem cells to become fat cells.

We can make conscious choices to reduce our exposure to chemicals by our choice of utensils, food, and elimination of chemicals in our homes, and workplaces. However, chemicals are so insidious in the environment -- our water, air, soil, grass and workplaces all have chemicals that can impact us in a very negative way. 

For instance, looking at the ads from hardware stores is just frightening! There are so many chemical solutions -- fertilizers, herbicides and pesticides -- for lawns and gardens, and very few organic and natural solutions! In each of the hardware stores that I visit, there are lots of chemical fertilizers, herbicides and pesticides and very few organic and natural options.

Just take a look at the weekly newspaper inserts and ads on TV. Spring and Summer are here - let's add more chemicals to our gardens, spray everything in sight, and pollute our rivers, lakes, oceans and waterways! No wonder there is such a dearth of bees, birds and butterflies!

If people would just stop buying these chemicals, the chemical companies that manufacture them will be forced to research and come up with natural solutions!

Chemicals Aren’t Why You’re Fat, But They’re Making You Fatter

A chemical that can be found almost everywhere causes stem cells to become fat cells. It won’t make you fat on your own, but it makes your crappy diet a lot worse for you. How can you avoid it?

According to a study published this week in Environmental Health Perspectives, the chemical, bisphenol A diglycidyl ether (BADGE), was once thought to actually inhibit the production of fat cells--in other words, scientists thought it stopped us from gaining weight. The scientists behind the study were operating on that assumption when they discovered that BADGE is actually an obesogen, meaning it promotes weight gain.

Saturated Fats Are Not As Bad As Previously Thought!

I am just glad that I can now eat all the saturated fats that I like without feeling guilty!  This article by Dr. Mercola and The Atlantic traces the history of how "Crisco" replaced saturated fats such as lard and butter, based on somewhat dubious scientific facts, and changed the way American cook. 

In the meantime, heart disease did not decline. We were made to believe that saturated fats, such as lard, butter and coconut, were really bad for us. While hydrogenated vegetable oil, such as Crisco and margarine were really bad for us.

We bought into this bad science, hook, line and sinker! We are now learning that saturated fats from walnuts, almonds, butter, coconut oil, and lard are not that bad. We need some fat in our diet, but everything has to be done in moderation as part of an overall healthy nutrition plan! So hello flavor, welcome to tasty and healthy cooking!

Is This Toxin Wafting from Your Dryer Vent?

Now that we are getting into summer -- you may actually consider using a good old line and pegs to dry your clothes and give your dryer a rest. Apparently, the ever so fragrant dryer sheets that we use can actually emit toxins that are not good! 


The alternative is to use alternatives such as organic and fragrance free methods. I use a hard ball to get my down comforter all fluffed up. After seeing one of those late night, "As Seen on TV Ads" featuring rubber balls that you can use instead of dryers sheets, I decided to try a hard rubber ball that I got from an Money Market conference on Fort Lauderdale that emits light when bounced on a hard surface. I had no practical use for it before I determined that it can fluff out my towels and comforters! Now that is ingenuity!
