Sunlight Plus Lime Juice Makes Drinking Water Safer

This is really good news for developing countries where access to clean water is limited. 


The ability to reduce pathogens in water through the use of lime juice and use of freely available sunshine to  purify water will help to reduce the incidence of water borne diseases such as diarhhea and dysentry.


UNICEF states that lack of safe water and sanitation is the world’s single largest cause of illness. In 2002, 42 per cent of households had no toilets, and one in six people had no access to safe water.


The toll on children is especially high. About 4,500 children die each day from unsafe water and lack of basic sanitation facilities. Countless others suffer from poor health, diminished productivity and missed opportunities for education.


The young and the old are particularly vulnerable. Over 90 per cent of deaths from diarrhoeal diseases due to unsafe water and sanitation in the developing world occur in children below 5 years old.

How to pick, cut, use, and eat Aloe Vera!

I purchased an Aloe Vera plant from Home Depot's indoor plant section. I nurtured the plant indoors until I got some really good growth!


Unfortunately when I tried to remove one leaf I ended up cutting off most of the leaves in the middle leaving only two leaves on the base! No problem -- I thought -- "I will just fillet and eat them"! Wrong numberThe inner fillet was so bitter -- I almost gagged! 


I decided to just fillet all the leaves and use them topically. Only problem was that I started to itch a bit when I rubbed the inner side of the leaf on my skin. I knew I had to be doing something wrong so I decided to search for a good video on how best to pick, cut, use, and eat Aloe Vera.


Next time I will pick the leaves for my smoothie when they are nice and round! By the way -- my Aloe Vera plant just sprouted new leaves in the middle so the plant is quite hardy and will rejuvenate without much effort! Also, I  used a potato masher to mash up some of the raw fillet for topical use, and froze the rest for use later. You can also use a blender  but it is too much effort to clean up later! I just go with the easiest approach as long as it works! I hope that it will work for you too.

Avocado -- one of the most complete foods!



I just love avocado which are quite prolific in Ghana where I was born and raised. We had some of the largest avocadoes you can ever imagine! We had a tree in our garden in Accra that was overshadowed by a giant silk cotton tree which tended to shed lots of leaves during the Harmattan season and created a lot of work for our household help. My  mother asked them to cut down the Silk Cotton tree an suddenly, the avocado tree bloomed. The avocadoes were so large they would sometime burst while on the tree. The avocado itself was very creamy with a slight sweetness. When the avocado tree was in bloom we would wake up each morning to pick up baskets full of avocadoes. This made us very popular in the neighborhood since we had to give away a lot of the avocadoes to our neighbors. 


There is so much that one can do with an avocado -- you can eat it raw or with crackers or a piece of toast; cut it into slices to add to a salad; mash it up, and add salsa and sour cream for guacamole, or use it as a mask for your face! However you decide to use it -- avocado is good for you!

Growing up we were told that "an apple a day, keeps the doctor away!". Turns out that this advice is actually pretty good! I always make sure that I have apples on hand and I find that they keep really well in the fridge. I eat them raw, and also add them to my breakfast smoothie! 


My favorite apples are Fuji apples they are crunchy and sweet with just a bit or tartness! I also like Gala, Honeycrisp, Braeburn, and Ambrosia apples. I avoid "Red Delicious" and "Green Delicious" apples like the plague! I am very suspicious of any thing with a generic name.


I think of apples the way I think of wine grapes -- the different varietals. If they are organic, they are even better! 


In the Summer and Fall, I have my fill of apples. When we lived in Sacramento, my sister and I had an annual pre-Thanksgiving ritual where we traveled to "Apple Valley" off Highway 50 to Lake Tahoe to visit the apple barnyards to savor samples of different apples, apple butter, apple fritters, apple sauce, apple pie, and apple cider! I still miss that ritual!


So wherever, you live -- try to work some apples into your diet! It is good for you!

It stands for Bisphenol A. It is a chemical used in the production of plastics and resins, such as some water bottles and the coatings of some food cans. It is also used in some consumer goods, such as compact discs and thermal cash register tapes.  And it has generated controversy about its impact on human health and development.


The Food and Drug Administration’s assessment is that the scientific evidence at this time does not suggest that the very low levels of human exposure to BPA through the diet are unsafe.


The agency has performed extensive research on BPA, has reviewed hundreds of other studies, and is continuing to address questions and potential concerns raised by certain studies.
