Approximately 20 percent of all stroke survivors will develop cognitive problems later in life, including vascular dementia. Experts with the Methodist Neurological Institute in Houston say recent research showing a possible link between vascular lesions and Alzheimer's disease is yet another reason to be more vigilant in our efforts to prevent a stroke.
Vascular dementia occurs when decreased blood flow to the brain -- often as a result of stroke -- causes tissue damage, resulting in diminished cognitive abilities. According to the National Stroke Association, vascular dementia is the second-leading cause of dementia, after Alzheimer's disease.
Prevent a Stroke and Stroke-Related Dementia
Aging, hardening of the arteries and a previous history of stroke are major risk factors for stroke-related dementia, according to Dr. John Volpi, stroke neurologist with the Methodist Neurological Institute in Houston, Texas. Other major risk factors and preventive measures are the same as those for stroke:
• Control high blood pressure and cholesterol levels through diet, exercise and medication, if prescribed by your health care provider.
• Quit smoking if you smoke.
• Manage diabetes through lifestyle changes and medication, as prescribed.
Signs of Vascular Dementia
Signs of vascular dementia can come on suddenly with the onset of stroke, or they can develop gradually. Gradual symptoms may be the result of a series of small, mini strokes rather than a single, catastrophic stroke, says Volpi.
Symptoms may include memory loss; difficulty concentrating or following instructions; inability to perform tasks that once came easily; and confusion, wandering or getting lost in familiar surroundings. In addition, changes in mood, behavior or personality -- including agitation, aggression or depression -- may occur.
If you or someone you care for is experiencing dementia symptoms, a complete clinical evaluation is necessary. This may include tests of cognitive functioning and brain imaging scans, such as computed tomography (CT) or magnetic resonance imaging (MRI), to pinpoint areas of damage. Following your health care provider's recommendations for treatment and medication may prevent or slow onset of stroke-related dementia.

Today I learned about "grounding" and connecting to the earth from the replay of David Wolfe's discussion on "Superfoods to boost your Immune system, adrenals and thyroid function" presented by Adoley Odunton's "Wellness Revolution".
I love gardening so winter time is really hard for me to deal with. Yesterday, I had this overwhelming urge to touch soil. I finally decided to clip all the dead branches and leaves off my patio herb garden. Just touching the soil made me happy again. I need to get some houseplants to help me through the long Northwest winter.
Another issue that David emphasized was "water" -- drinking lots of water to reduce inflammation. He recommends natural spring water.
He recommends super foods and herbs to create an arsenal to boost your immune system. He mentioned the following
Other super foods to consider -- blueberries, raspberries, blackberries.
Use powdered super foods (concentrated) to supplement fresh super foods.
Calcification affects our immune system and leads to inflammation. Calcium supplements could be adding to the calcification problem.

I feel sorry for Paula Deen -- her announcement of her Type 2 diabetes condition should have netted her some sympathy but the backlash has been relentless and a bit mean-spirited.
Granted, she hid her condition from her viewers and only disclosed it when she had inked a deal on a Big Pharma drug endorsement. The conflict of interest and her lack of candor in continuing to tout fat and sugar laden recipes to her adoring fans at a time when she could have used her Type 2 diabetes condition as a teaching moment for promoting healthy eating and living is inexcusable!
I am not a Paula Deen fan. I have a hard time watching Paula's cooking shows on Food TV. Cooking with a whole stick of butter is just not very appealing to me. It just makes me cringe! I still rooted for Paula's success because she is a nice lady and pulled herself up by her bootstraps and raised two sons by herself!
Despite our misgivings, we have no right to be so self righteous in judging her so harshly because nobody is perfect. I wish Paula the very best with her health and hope that her viewers learn more about diabetes, getting tested for the condition, eating well and taking good care of themselves.
Type 2 diabetes is one of thee leading causes of disability and death in the United States. If it’s not controlled, diabetes can cause blindness, nerve damage, kidney disease, and other health problems. This is what the experts suggest:

1. What is endometriosis?It's a condition in which the same cells that make up the uterus lining (known as endometrial cells) grow outside the uterus too. No one’s sure what causes this.
These cells are most commonly found in the ovaries, fallopian tubes, ligaments holding the uterus in place, and the pelvic cavity lining.
Although it’s rarer, they can also grow almost anywhere in the pelvis – such as the vagina, cervix, bladder and bowel. They’ve even been reported growing in other organs of the body, including the lung, liver, brain and skin.
Normally, endometrial cells of the uterine lining are shed during the monthly menstrual cycle. Outside the uterus, they'll bleed out monthly wherever they're located.
If these cells grow on organs that don’t have an exit from the body, the blood will remain, causing pain and, eventually, scar tissue.

Canola - Wikipedia, the free encyclopedia
Now this is a good example of a product that has long been touted as a good oil and it now turns out it is mostly made from genetically modified rapeseed and could cause cancer to boot! I had been using a blend of olive oil and canola oil for regular cooking for the last two years and definitely will be making a change!

Other cooking oils that you can consider are:
1. Grapeseed oil which may have medicinal benefits.
2. Sunflower oil and Safflower oil are also good alternatives as the omega-6 fatty acids in the oils may also reduce the risk of cardiovascular disease.[3]

4. Coconut Oil -- after being maligned as being bad and high in cholesterol, coconut oil is now touted as one of the good oils. It is extracted from the pulp of mature coconuts.

Okay -- this is the kind of report on microwaving food that I have been waiting for. "To nuke or not to nuke, that is the question!" The evidence suggests that any type of cooking results in loss and leaching of nutrients; however, microwaving can affect the molecular structure of certain foods and render certain nutrients inactive. Not a good thing if you are doing all you can to improve your wellness!
Below I present two viewpoints about using microwaves

So the question is should you ditch the microwave or use it in moderation and what are the alternatives for busy people and stressed-out Moms! I suggest that you use it in moderation. I have been using the "Defrost" setting for thawing meat, chicken and fish, warming up muffins, heating water for tea, or warming up tea and other beverages. It takes a little longer but I am able to control the temperature a lot better.!
Some alternatives that you can consider are:
1. Convection Toaster Oven: cooks food fast and also toasts, bakes and roasts! The Breville "Smart Oven" Convection Toaster Oven is a good example of an alternative to the microwave!
2: Infrared Table Top Oven: such as the NuWave Oven uses infrared and convection heating to cook food fast and allows the retention of essential nutrients.
3. Kettles: You can use a regular or electric kettle to boil water for tea and other hot beverages. I recommend an electric kettle with an automatic shut off. Here is a link to an extensive selection of kettles from Target. There are additional selections from Amazon.

7 Unexpected Uses for Your Microwave
Chances are you have a microwave sitting somewhere in your kitchen. They've gotten smaller over the years, but even the most svelte version takes up precious real estate. It's time to put that baby to work.
Here are 7 unexpected uses for your microwave:

1. Cook fish - Cook a steak in the microwave and you'll end up with shoe leather. Fish, on the other hand, can be cooked perfectly in the microwave. Simply wrap your fish in microwave-safe plastic with a little seasoning (salt and pepper and some lemon, perhaps) and cook for about 2 minutes on high. (The time for doneness will vary depending on the strength of your microwave and the size and shape of your fillet. Watch it closely to prevent overcooking.)

2. Sanitize your kitchen sponge - Sponges are a breeding ground for germs. It's easy to just throw them away, but they're not cheap, so extend the use of your sponge by zapping away harmful bacteria in your microwave daily! Just place your (wet) sponge in the microwave and nuke it for 2 minutes on High. That should be enough to kill 99% of the harmful bacteria that set up camp there.
3. Make potato chips - It's hard to believe anything can get as crispy as a potato chip in the microwave, but believe it! Thinly sliced potatoes crisp up beautifully in the microwave (see the recipe below) and since these crispy chips aren't fried, they're healthier for you, too, with around 8 grams less fat per serving than regular chips. Who knew?
4. Steam vegetables - Put that annoying steamer basket away and cook your veggies in the microwave. Not only is it easier, but it's better for you. The longer and hotter you cook a food, the more you'll lose certain heat- and water-sensitive nutrients, especially vitamin C and thiamin - a B vitamin. Because microwave cooking often cooks foods more quickly, it can actually help to minimize nutrient losses.

5. Soften brown sugar - Ever go to make cookies and find your brown sugar is as hard as a rock? Put down your chisel, moisten some paper towels and place them on top of your brick of brown sugar. Microwave in 30-second increments and your brown sugar will loosen up. Crisis averted.
6. Cook bacon - No room for another pan on your stove to cook bacon in for breakfast? No worries. You can get crispy bacon in your microwave. (With less mess!) Cover a microwave-safe dish with a couple of paper towels. Add bacon in a single layer. Cover the bacon with a couple more paper towels and cook in 2-minute increments until crispy.
7. Use it as a proofer - Calling all bakers! Need a warm, moist place for your dough to rise? The microwave is the perfect place to set up a temporary proofer (for nonbakers, a proofer is a contraption that creates ideal conditions, i.e., warm and moist, for yeast breads to rise.) The sealed environment of your microwave will keep the moisture and heat in. Just heat a cup of water in your microwave until it's steaming, then put your dough in along with it, shut the door and let it do its thing.

Active time: 30 minutes | Total: 30 minutes | To make ahead: Store in an airtight container for up to 3 days.
You don't need a deep fryer to make crispy potato chips. We toss thinly sliced potatoes with just a touch of olive oil, pop them in the microwave and voilà ! Crispy, crunchy homemade potato chips with 8 grams less fat per serving than regular chips.
1 1/3 pounds Yukon Gold or red potatoes, unpeeled, scrubbed
2 teaspoons extra-virgin olive oil
1/2 teaspoon salt
1. Slice potatoes into thin (1/8-inch) rounds. Toss the slices in a medium bowl with oil and salt to coat evenly.
2. Coat a large microwave-proof plate with cooking spray. Arrange some potato slices in a single layer on the plate. Microwave, uncovered, on High until some slices start to brown, 2 to 3 minutes (depending on potato thickness and microwave power). Turn the slices over and continue microwaving until they start to crisp and brown around the edges, 2 to 4 minutes more. Check frequently and rearrange slices as needed to prevent scorching. Transfer the chips to another plate and allow to cool completely. (They will crisp more as they cool.) Repeat with the remaining potato slices.
Makes 4 servings, 12-14 chips each.
Per serving: 141 calories; 2 g fat (0 g sat, 2 g mono); 0 mg cholesterol; 26 g carbohydrate; 3 g protein; 2 g fiber; 291 mg sodium; 807 mg potassium.
